I have got the most amazing and wonderful and fantastic news to share.
Soon. Not quite yet.
But I do have some other great news... and that is that I am starting this new series on my blog called "Baking With". I will feature a blog or person that is inspirational, creative, innovative, and fun!
If you are interested in being considered for a "Baking With" spotlight post, please leave a link to your blog in the comment section below. (You may also leave a link to your favorite post if you want to be a show off! I like show offs. And dont forget to show Kristen a little love too! )
This weeks feature is the amazing blog Dine & Dish.
Kristen from Dine & Dish is one of the neatest people I know. She is smart, sassy, witty and funny. She takes the most stunning pictures, and definitely inspires to me to strive for better.
Its truly my honor to have her be here today. This recipe she has shared is no small gift. Its fantastic. And delicious. And perfection.
Thank you so much Kristen!
Be sure to check her out on Facebook, Twitter, and Instagram. She rocks them all.

Pumpkin Spice Bundt Cake with Creamy Pumpkin Glaze
It is slightly intimidating to be writing a post on Amanda’s site. If you know my work at Dine & Dish at all, you will note that cake decorating, cookie decorating, basically any kind of decorating at all is not a talent I possess. My one and only attempt at piping roses turned into what I would call a collection of “cabbages”, looking nothing like the beautiful roses Amanda is able to produce!
I have a great appreciation for beautiful food, especially cakes. Because I lack decorating skills, I like to turn to the Bundt cake for something beautiful without all the fancy decorating. Bundt cakes seem to have a simple elegance without requiring a lot of work.
For this dessert, I adapted my favorite sour cream Bundt cake recipe and added pumpkin to give it a fall twist. I also created a powdered sugar glaze, but included pumpkin and cinnamon there as well. The result? A beautiful pumpkin Bundt cake, perfect for fall. I hope you enjoy it.
Recipe: Pumpkin Spice Bundt Cake with Creamy Pumpkin Glaze
For the cake:
- 2 cups granulated sugar
- 1 cup butter, softened
- 4 large eggs
- 1 cup canned pumpkin
- 1 cup sour cream
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 tablespoon ground cinnamon
- 2 teaspoons baking soda
- 1 teaspoon salt
For the glaze:
- 1 cup powdered sugar
- 1 tablespoon milk
- ½ teaspoon vanilla extract
- 2 tablespoons canned pumpkin
- ¼ teaspoon cinnamon
- 2 tablespoons butter, melted and cooled
For the cake:
- Preheat oven to 350° F. Grease and flour a 12-cup Bundt pan (I use Pam Baking spray).
- Add sugar and butter to a large mixing bowl. Beat on low until light and fluffy.
- Slowly add the eggs, one at a time, and continue mixing until well incorporated.
- Add the pumpkin, sour cream and vanilla, mixing on slow speed until well blended.
- While mixer is still going on slow, add the flour, one cup at a time. Next, add the cinnamon, baking soda and salt. Blend until well incorporated.
- Pour cake batter into prepared Bundt cake. Bake for 60 minutes or until a knife inserted into the center comes out clear.
For the glaze:
- Place powdered sugar in a medium bowl. Slowly whisk milk into the powdered sugar. Continue whisking until no lumps appear.
- Continue whisking while adding vanilla, canned pumpkin, cinnamon and melted butter.
- Once glaze is smooth, gently pour over the top of the Bundt cake, allowing to drizzle down the side of the cake.
- Slice, serve and enjoy.
Thank you so much Kristen! This cake is stunning and I am so excited to make it for our Thanksgiving celebration!
I came home and saw this recipe and immediately baked it up. It is so delicious!! Thank you for another great recipe. I'm a huge pumpkin fan and can't have enough recipes that use it.

Rachel - it's just 1 cup of pumpkin for the cake and 2 Tablespoons for the glaze.
Cindy - you can most definitley use pumpkin pie spices in this. I bet that would be a delicious alteration! Let me know if you try it!

Did you invert the cake immediately upon taking it out of the oven? or did you let it cool for a bit and then invert it?

I love your blog and Kristen's pumpkin cake. Pumpkin is the best. I really loved the Halloween spider in the jar cake. I will be posting Halloween recipes starting in October. Halloween is so much fun.

Hmm...that looks so yummy and a great idea for pumpkin flavor ina dessert, since somehow the texture of pumpkin pie doesn't appeal much to me (to say it nicely ;)
I'd love to be considered for your new series http://specialtycakecreations.com/red-and-white-topsy-turvy-cake/

Making this tomorrow! Probably modifying it a bit: two six cup cakes, and 6 oz of honey greek yogurt and 2 oz of sour cream instead of a full cup of sour cream. nom nom pumpkin time!
Thanks for the recipe!

This is my favorite recipe that I've done so far (and that's a pretty long list at this point even if I am fairly new)! I baked the batter in little pumpkin shaped cake tins and piped a few green leaves with Cinnamon icing on top of the glaze and they were amazing. These have been a HUGE hit at dinner parties and such.
I made a batch as a thank you for a coworker and he keep asking when I'll get around to making more! I adore your blog! Thanks!
