Have you noticed I make a lot of cookies? No? First time here huh?
Well. I was in the mood for something a bit more...savory... but still on the sweet side.
I had no idea how easy they were to make!! And so, so, so good.
You will need:
1 7 oz. jar marshmallow creme
1/2 tsp. almond extract
3 cups powder sugar
1 14 oz bag caramels
2 cups salted nuts
Wax or parchment paper
1. Put marshmallow creme, extract, and powder sugar in a bowl and combine with your hands. This can take a few minutes! The dough will be very stiff.
2. Divide into 6-10 pieces depending on how big you want your nut roll to be, then roll into the cylinder shape.
3. Wrap each cylinder in wax paper and place in freezer for at least 2 hours.
4. Melt caramels in microwave for about three minutes, removing to stir at 30 second intervals. Make sure they are completely melted.
5. Place salted peanuts (or whatever variety you would prefer) on baking sheet.
6. Remove rolls from freezer, then dip into caramel and coat completely. Try not to use your fingers! This gets really messy if you do... you can use two forks to dip and remove.
7. Place caramel covered roll onto salted nuts and cover completely.
8. Transfer nut covered roll onto wax paper, then store in the refrigerator! (they should be good for a last a month in the fridge, but who am I kidding. We are lucky if these make it 2 days in our house)

So, I came over innocently enough to get your recipe for the Oatmeal Cranberry Chocolate Spice Cookies, because I'm baking cookies tomorrow morning with a friend from church. Now, of course, I've seen these!!! And I no longer know what to do. :-)

lol... I dont know.. those cookies are pretty amazing.. I think I would say make the cookies first, and if you still have energy, make the rolls!! lol

fact: there’s no such thing as making too many cookies, unless, of course, you have so many that they go to waste. meh, that’s what freezers are for. :)
i love these logs o’ caramel and nuts, mostly because marshmallow creme is involved--i could eat that stuff by the jar-full!

On the blog that makes my mouth water, but I am never truly tempted because I know I can't have them (well I can, but the kids can't which means I would have to eat them all which is probably not a good plan)...and you go and post gluten lacking foods.

I tried this recipe and you're right -- it's easy and tasty. My husband really liked them, and that's a hard-to-come-by feat. But the caramel got too hard after being chilled. We had to soften them up in the microwave. I will try them again, but maybe I'll add a bit of milk to the caramel as it melts, to make it less solid in the end. I'll probably also make them a bit smaller. I got 10 from my batch and they were still a tad large for a single serving. Bite-size poppers might be fun. Anyway, thanks for the fun and tasty recipe!

Oh my goodness, SALTED NUT ROLLS! I'm Canadian but my husband is from Minnesota and when I went to visit him I feel head over heels in love with the salted nut roll! I will be making these ASAP!

I made these tonight up in the frozen north (Montana) and after dipping 4 of them, I figured out I needed to put about 3 or 4 tablespoons of heavy cream into the caramel to make it not harden up to a rock-like shell the moment the nougat hit the caramel. I'm saving those four for people who are mean to me (I kid).
My mom loved the sample she tried for me. I hope my friends like them too. =D
